RUBY MURRAY

(Simple Chicken Curry)

Ingredients:

4 Chicken Breasts

1 onion (large)

1 Tin chopped tomatoes

1 Red or Green Chilli

3 Garlic cloves

1 tbsp Turmeric

1 tbsp Cumin

1/2 tbsp Curry powder

1 tbsp Tomato purée

300ml Chicken stock (optional)

Salt and Pepper

75g Rice (per serving)

Method:

To start, chop the onion and garlic. Add the onion to a pre heated pan with a drop of oil and fry off for 3/4 minutes until softened. Chop and deseed the chilli (leave seeds for more heat). Slice the chicken into cubes and add to the pan. Cook the chicken for 3/4 minutes adding the garlic, Turmeric, Cumin and curry powder. Add 300ml of chicken stock (optional) followed by the chopped tomatoes and bring to the boil. Reduced heat to simmer adding the tomato purée and season with salt and pepper (if needed).

For the rice:

Add 75g of rice per serving

(150g for 2)

Add 300ml water with a pinch of salt

Bring to the boil and the simmer for 13/15 minutes.
