Leek and potato soup


Ingredients :

Knob of butter

225g potatoes

2 medium leeks

1 onion

2 pints of vegetable stock

150ml double cream

Salt and pepper

Bunch of fresh parsley

Method :

Chop the onion and leeks then peel the potatoes and cut them in to half. Heat a pot then add the knob of butter followed by the onion, leeks and potatoes and cook them for few minutes until they soften.

Add the 2 pints of vegetable stock and bring to the boil adding salt and pepper for seasoning. Leave to simmer until the veg has softened. Let it cool for 10 minutes before giving it a quick whizz up with a hand held blender. Blend the soup until you get a nice smooth texture. To dress the soup, drizzle the cream and add a pinch of black pepper and some parsley leaves.
