Roasted Spiced Cauliflower
Ingredients:
2 tbsp olive oil
1 tsp coriander seeds
1 tsp cumin seeds
1 tsp curry powder
1 tsp turmeric powder
1 large head cauliflower,chopped into 1 inch florets
teaspoon finely grated ginger
1teaspoon finely grated lemon zest
Method:
Preheat the oven to 250c
In a bowl mix the spices with the oil and add the cauliflower. Toss to coat the cauliflower evenly then lay the pieces on a baking tray. Roast in the oven for 10-15 minutes until crispy round the edges. Serve in a bowl with a sprinkle of ginger and lemon zest
