Roast Beef

Ingredients

950g Beef joint (Aldi)

1 onion cut into quarters

1 bag small carrots halved lengthways

2-3 garlic cloves

Salt and pepper

Method

Pre-heat the oven at 220/240c
Season your beef joint with salt and pepper. Chop the onion into quarters and cut the carrots in half lengthways then add to a roasting tin along with he garlic. Sit the beef on top, then cook for 20 mins.

Reduce oven to 190C/170c and continue to cook the beef for 30 mins - this will be medium/rare 


Remove the beef and carrots from the oven, place onto warm plates or platters and cover with foil to keep warm.

Let the beef rest for 20 minutes.

Turn the oven back up to 200c to cook your Yorkshire puddings
